chicken enchiladas....

Still on a roll with the cooking! 

Chicken enchiladas!

1. Boil chicken...I used a package of boneless, skinless breasts...you can use a whole chicken...Shred...
 2. One large and small can of green sauce...
 3. Can of pink and black beans, drained...
 4. Mix with chicken and simmer...



 5. Pour green sauce into pan, add tortilla, filling, sour cream and cheese...
 6. Roll...add filling to the top along with cheese...
 7. Heat in oven and eat!

Sounds yummy! I've never made them with green sauce or with beans. I think this will go on my menu next week.
